Sometimes you don’t need a whole 30-pound turkey. Whether it’s a small dinner party, or an intimate holiday celebration, a two-pound turkey breast is all you need. Or maybe you want a way to test your holiday hosting skills. Whatever your small roast plans, this turkey breast recipe is perfect for two to four – no leftover containers needed.

Roasted turkey breast recipe
Makes 2 to 4 servings.
Ingredients
- 1 half turkey breast (about 2 lbs)
- 2 tbsp maple syrup
- ½ tsp dried garlic
- ½ tsp onion powder
- 1 tsp sweet paprika
- ½ tsp salt
- ½ tsp black pepper
Instructions
Chef tip: The key here is low and slow. Lower your temperature, and increase your cooking time.
- Rinse turkey breast and pat dry with a dish towel.
- Drizzle turkey breast with maple syrup to coat it.
- Combine remaining seasonings and sprinkle over the top and bottom of the turkey breast.
- Let sit in the fridge uncovered skin side up for 1 to 4 hours.
- Preheat oven to 400-degrees Fahrenheit.
- On a sheet pan lined with parchment paper, place turkey skin-side up. Loosely cover with aluminum foil.
- Bake for 40 minutes.
- Uncover and bake for another 20 minutes, until skin is golden and crispy, and internal temp reaches 165-degrees Fahrenheit.
- When ready, let the turkey breast rest on sheet pan for 20 minutes.
- Transfer to cutting board and thinly slice. Set aside the jus and keep warm.
- When ready to serve, pour cooking jus over the turkey.
